
It’s Fall Y’all! Time for pumpkin spice everything. Here is our favorite recipe for vegan pumpkin spice cookies.
AND… this recipe is Gluten-Free!
Using Millet Flour instead of all purpose flour makes these cookies Gluten-Free.
Here is the type of Millet Flour we use:

And, if you don’t have this flour… no worries. Substitute by using your favorite type of flour.
This recipe is easy to make and is perfect for even beginner bakers.
And, who doesn’t LOVE warm cookies straight from the oven.
INGREDIENTS YOU WILL NEED:
- ½ cup Pumpkin Puree
- ¼ cup Brown Sugar
- 1 tbsp Coconut Oil
- ½ tsp Vanilla Extract
- 1 cup Millet Flour (or your favorite type of flour)
- 1 tsp Pumpkin Spice
- ½ tsp Baking Powder
- Pinch of Salt
- ½ cup Powdered Sugar
- 1 tbsp Maple Syrup
- 2 tbsp Almond Milk
Vegan Pumpkin Spice Cookies
Ingredients
- ½ cup Pumpkin Puree
- ¼ cup Brown Sugar
- 1 tbsp Coconut Oil
- ½ tsp Vanilla Extract
- 1 cup Millet Flour
- 1 tsp Pumpkin Spice
- ½ tsp Baking Powder
- Pinch of Salt
For the Icing
- ½ cup Powdered Sugar
- 1 tbsp Maple Syrup
- 2 tbsp Almond Milk
Instructions
- Whisk together millet flour, pumpkin spice, baking powder, and salt in a bowl.
- In a separate bowl, blend together pumpkin puree, brown sugar, coconut oil, and vanilla extract.
- Blend the dry mixture into the wet ingredients.
- Take tablespoonfuls of the dough and roll into balls. Slightly flatten and arrange on a baking sheet lined with parchment.
- Bake for 12-15 minutes at 350F.
- Blend together all ingredients for the icing in a bowl.
- Take cookies out of the oven and leave to cool.
- Drizzle icing on top of the cookies.
