These Vegan Potato Fritters are made cruelty-free!
Most of the time when people see that a recipe is 100% vegan they will think that the recipe will not be good!
Although, so many vegan recipes are actually very delicious without all of the animal products!
Now my favorite vegetable is actually a potato! So when we made this recipe I really enjoyed the final product.
My favorite thing about this recipe was the vegan sriracha mayonnaise! Dipping the fritters into that sauce added a nice kick.

Vegan Potato Fritters

Ingredients
For Potato Fritters:
- 2 raw potatoes medium-sized; peeled & grated
- 1 red onion small, chopped
- ¾ cup red lentils
- 2 garlic cloves
- 1 medium-sized carrot; peeled & grated
- 5 tbsp. all-purpose flour
- 1 tsp. regular paprika powder
- ½ tsp. smoked paprika powder
- 1 tsp. marjoram
- Black pepper & salt to taste
For Sriracha Mayonnaise:
- 3 tbsp. vegan mayonnaise
- ½ tsp. smoked paprika powder
- 1 tsp. garlic powder
- Black pepper sriracha sauce & salt to taste
- 1 tsp. tomato paste
Instructions
- Prepare the red lentils as per the instructions provided by the manufacturer.
- Combine the potatoes together with flour, onion, garlic, cooked red lentils, carrot & the spices in a large bowl; give everything a good stir until combined well.
- Now, over moderate heat settings in a large non-stick pan; heat some of the olive oil until hot & add approximately 1 ½ heaped tbsp. of for each fritter.
- Cook for 3 to 4 minutes per side.
- Combine the entire vegan sriracha mayonnaise ingredients together in a large bowl; stir well until evenly combined.
- Serve the cooked fritters with the sriracha mayonnaise and a green salad. Enjoy.
