All it takes is 5 ingredients, a mixing bowl, a whisk, and only 10 minutes to get this parfait going.
Here are the ingredients:
- 1 cup Coconut Cream
- ½ tsp Xanthan Gum
- 2 tbsp Powdered Sugar
- 1.5 cups Diced Papaya
- ¼ cup Chopped Walnuts
Our recipe yields 3 parfaits, but you can always double the ingredients if you need to make extra (which we recommend!).
It’s perfect for a sweet treat after dinner, or maybe even for breakfast the day after. This vegan papaya parfait is cool, refreshing, and super juicy sweet – perfect for summertime.

Vegan Papaya Parfait
Ingredients
- 1 cup Coconut Cream
- ½ tsp Xanthan Gum
- 2 tbsp Powdered Sugar
- 1.5 cups Diced Papaya
- ¼ cup Chopped Walnuts
Instructions
- Combine coconut cream, xanthan gum, and powdered sugar in a large mixing bowl. Whisk to soft peaks.
- Layer papayas, whipped topping, and walnuts in a glass.
- Chill until ready to serve.
Notes
* Feel free to switch out any nut you prefer! We used Walnuts, but Cashews, Pistachios, and Pecans would all pair well too.
