Vegan Coconut Oat Cookies
Oh how I love coconut and oats. So why not mix them together and indulge in come amazing vegan cookies.
In today’s recipe I have combined two of my favorite cookie ingredients into one awesome cookie recipe.

Vegan Coconut Oat Cookies
Servings: 20 cookies
Ingredients
- 1 large Ripe Banana
- 3/4 cup Applesauce, no sugar added
- 2 tbsp Pure Maple Syrup
- 1 3/4 cups Rolled Oats, coarsely ground
- 4 oz Unsweetened Desiccated coconut
Instructions
- Preheat oven to 400F.
- Line a baking sheet with parchment paper.
- Mash the banana with a fork in a medium bowl.
- Stir in applesauce and maple syrup. You should get a smooth mixture.
- Add oats and coconut and stir until well combined.
- Scoop the dough (1 ½ tablespoons each) onto a baking sheet and press gently to flatten the cookie mounds.
- Bake the cookies 15-20 minutes or until golden.
- Cool on a wire rack before serving.
