Awe tapioca, one of my favorite desserts as a child. I pretty much never thought about tapicoa after I went vegan because it was made with milk.
But a year or so ago I started to think of how I could bring back my favorite dessert and make it vegan.
That’s when I started testing out different recipes and the vegan coconut lychee tapioca was born.
I fell in love with lychee while in Bali so I figured why not mix two of my favorites to create a tasty, yummy dessert.

Vegan Coconut Lychee Tapioca
- 1 cup Lychee Syrup (from canned lychees)
- 1 400 ml Can Coconut Cream
- 3 tbsp Minute-Tapioca
- 1 zest Lime
- Lychees for topping
- Combine the lychee syrup, coconut cream, tapioca, and lime zest in a pot. Stir and bring to a boil.
- Take off the heat and divide into serving molds or cups. Leave to cool to room temperature.
- Chill and serve.
