It’s mango season. And, nothing is as sweet and refreshing as a ripe mango.
If you want a perfect summer breakfast recipe, look no further!
This is a sweet treat that is perfect to make if you have company over! Even, non-vegans will love ’em.
Ingredients you will need:
For the Vegan Waffles
- ¾ cup Flour
- 1 tsp Baking Powder
- 2 tbsp Sugar
- 1 cup Soy Milk
- 2 tbsp Vegetable Oil
For the Mango Caramel
- 1 Ripe Mango, peeled and diced
- 1 cup Sugar
- ½ cup Water
- ½ cup Coconut Cream
The secret to this recipe, is a truly ripe mango! When they are ripe, they are a lot sweeter.
FYI – Not all sugar is truly vegan. If you want to be sure your sugar is vegan, this is the Vegan Sugar we use:

Mango Caramel Vegan Waffles
Ingredients
For the Waffles
- ¾ cup Flour
- 1 tsp Baking Powder
- 2 tbsp Sugar
- 1 cup Soy Milk
- 2 tbsp Vegetable Oil
For the Mango Caramel
- 1 Ripe Mango peeled and diced
- 1 cup Sugar
- ½ cup Water
- ½ cup Coconut Cream
Instructions
- Add the diced mangoes into a food processor and blend until smooth.
- Add sugar and water to a saucepan. Stir over low heat until color turns amber.
- Slowly whisk in mango puree and coconut cream. Cook over low heat until thick. Set aside to cool.
- Whisk together flour, baking powder, and salt in a bowl.
- Stir in soy milk and vegetable oil.
- Ladle batter into a waffle iron and cook for 3-5 minutes.
- Serve waffles hot with mango caramel on top.
Notes
*Note – if you do not have a food processor, you can use a blender. Blend mangos till smooth.
