I have to warn you that the next paragraphs may contain swearwords as it is how it was written by Thug Kitchen.
But do not worry; once you get through all the cursing, you will realize you have a solid cookbook on your hands that I bet like us will be cooking out of more than once per week.
Badass Bean Dip
A party is lame without a super bowl of bean dip. Do not buy some pretentious pop-top dip at some local store because that kind of shit smells and tastes like cat food. Quit wasting your space at a snack bar with that bullshit and make a badass bean dip instead!
To make the enchilada sauce, you will need:
1 cup vegetable broth
2 tablespoons tomato paste
1 ¼ tablespoons chili powder
1 teaspoon ground cumin
3/4 teaspoon dried oregano
2 cloves of garlic, minced
1 teaspoons of soy sauce or tamari
1 ½ teaspoons lime juice
For the bean dip, you will need these ingredients:
1 teaspoon olive oil
½ a white or yellow onion, chopped
½-1 whole jalapeno, seeded and chopped
Pinch of salt
¼ teaspoon ground cumin
2 cups of cooked pinto beans
½ cup veggie broth and
2 teaspoons of olive oil
To make the sauce, the first thing to do is dump every ingredient except the lime juice into a mini sauce pan and bring it to simmer. Use a tool like a whisk or something to ensure that your tomato paste is not just sitting a clump. Let the sauce simmer together for about 8-10 minutes to give for the sauce to thicken up. Once the sauce becomes thicker, add the lime juice and turn off the heat.
Let that sauce cool down while you make the rest of the dip. Warm up the olive oil in a medium sauté pan over a medium heat. Dump in the onion and sauté that son of a gun until it begins to look nicer and golden brown in some spots. This may take about 5 to 7 minutes. Then add the jalapeno, salt and cumin and sauté for an additional minute or two to avoid preserving the jalapeno’s raw taste. Turn off the heat once everything is done.
Place half of the beans inside a blender and bring the other half in a medium bowl. The beans in the bowl must be smashed around using a potato masher or a huge ass spoon until not too many whole beans are left. With the other half of the beans in the blender, throw in the broth, remaining oil, 1/3 cup of the enchilada sauce and half of the cooked onions and jalapeno. Blend until smooth. Stir the mixture into the mashed beans and add the remaining cooked onions and jalapenos. Serve everything warm with the rest of the enchilada sauce poured on top. Top the sauce and dip with chopped cilantro, tomatoes and onions if you are into any of that fancy shit.
Spiced Apple Waffles
Make a fruity waffle by sneaking some fruit into your batter for a sweeter treat that will surely make you feel less guilty about your waffle habit.
All you need are:
2 ¼ cups of your favorite non dairy milk,
1 teaspoon apple cider vinegar or lemon juice
2 ½ cups all-purpose or whole wheat flour
1 tablespoon baking powder
¼ teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1 cup grated fresh apple, with its skin on
4 tablespoons of brown sugar
2 tablespoons of oil and
Spray oil of some kind
Begin by warming up the waffle iron. Make sure you do have one, or everything would not go into plan. If you do not have one, borrow and get back in the kitchen! Mix together vinegar and milk in a small glass and set it aside. In a larger bowl, whisk together the baking powder, flour, salt and spices so that they are all mixed up. Toss together the sugar and grated apple in a smaller bowl and set aside.
Make a well in the middle of the flour mixture and pour on the oil and milk. Whisk all these together until there are no more dry spots and minimal lumps. Fold in the apples and sugar until they are combined. Be cautious on not over mixing the paste or you will be eating damn awful waffles for breakfast.
Spray the warmed up waffle iron with oil so the waffle won’t stick then pour in some batter. Cook until its golden brown and crispy according to the directions of your waffle maker. Top off the waffle with your favorite toppings like syrup and nuts.
Almond milk can also be used instead of non-dairy milk. You may use any kind of apple that you will actually eat and it is alright to be picky with your fruit. You may also use alternatives for oil like grape seed or olive. Just use whatever you got and your waffle will be great!
