Here is a vegan rice pudding that is simple to make and delicious. It can be served warm or chilled.
INGREDIENTS YOU WILL NEED:
- ½ cup Short-Grain Rice
- 3 cups Water
- 1.5 cups Coconut Cream
- 1 tbsp Vanilla Extract
- ¼ cup Sugar
- 3 tbsp Chopped Pistachios
- 2 tbsp Brown Sugar

Dairy-Free Turkish Rice Pudding
Ingredients
- ½ cup Short-Grain Rice
- 3 cups Water
- 1.5 cups Coconut Cream
- 1 tbsp Vanilla Extract
- ¼ cup Sugar
- 3 tbsp Chopped Pistachios
- 2 tbsp Brown Sugar
Instructions
- Put the rice and water in a pot. Bring to a boil. Cover and simmer for 15 minutes over low heat.
- Stir in coconut cream, sugar, and vanilla. Simmer over low heat, stirring continuously, until thick.
- Ladle into bowls and top with brown sugar and chopped pistachios.
